		<description>And if you are inclined to nouvelle Nordic cuisine and cannot get to Copenhagen, may I suggest Aquavit -- a fantastic resturant in NYC. Chef Marcus Samuelsson works his magic there. He had a second Aquavit in Minneaahhpolis, which succumbed to the post 9/11 restaurant slump. If you are a competent home cook, try Sanuelsson's cookbook: Aquavit: And the New Scandinavian Cuisine. There is also a PBS series with bubbly Swedes cooking a combination of traditional and new recipes from Lapp villages to southern Denmark. It's a hoot! www.scandcook.com is the accompanying site.
